Ingredients
  

Roasted Potato Wedges

  • 3 3 – 4 medium Yukon Gold or red potatoes cut into thick wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp seafood spice blend see below
  • Salt & pepper to taste

Seafood Chowder

Poutine Toppings

  • cups cheese curds or chopped mozzarella
  • Fresh chives or parsley chopped
  • Optional: crisp bacon bits or pancetta

Instructions
 

🔪 Instructions

  • Roast the Potato Wedges
  • Preheat oven to 425°F (220°C).
  • Toss potato wedges with olive oil, seafood spice blend, paprika, salt, and pepper.
  • Spread on a baking sheet and roast for 30–40 minutes, flipping halfway, until golden and crispy.

Prepare Seafood Chowder

Assemble the Poutine

  • Place roasted wedges in shallow bowls.
  • Top with cheese curds.
  • Ladle hot chowder over top.
  • Garnish with chives, bacon bits (optional), and a few mussels in the shell for presentation.

Seafood Options: You can use canned clams (drained) or steam fresh mussels and clams before adding.
Cheese Curds: Can’t find them? Use torn mozzarella or white cheddar.
