Ingredients
  

  • 4 large russet potatoes cut into fries
  • 2 tbsp white vinegar optional, for soaking fries
  • Vegetable oil for frying
  • 1 ½ cups cheese curds preferably white cheddar

  • 1 tsp soy sauce
  • 2 tbsp oil or butter for gravy
  • 2 cups cold water for gravy
  • Salt to taste

Instructions
 

Prepare the Fries

  • Soak cut potatoes in cold water with vinegar for 30 minutes (optional for extra crispiness).
  • Drain and pat dry. Heat oil to 350°F (175°C) in a fryer or deep pan. Fry in batches until golden brown (about 5 minutes).
  • Remove and let rest for 5 minutes, then fry again at 375°F (190°C) for an extra crispy finish.

Make the Gravy

  • In a small saucepan, heat 2 tbsp oil or butter over medium heat.
  • Stir in 3 tbsp all-purpose flour and cook for 1–2 minutes, stirring constantly, to make a roux.
  • Add gravy packet contents, 2 cups cold water, and 1 tsp soy sauce.
  • Whisk until smooth, bring to a gentle boil, then simmer for 3–5 minutes until thickened.

Assemble the Poutine

  • Arrange hot fries on a plate or in a shallow bowl.
